i guess you either love cheese, or you hate cheese. this is fun for those of us who do.
grate coarsely, and toss with 4 tsps of cornstarch:
8 ozs. of emmenthaler cheese
8 ozs. of "mount austria" swiss cheese
10 ozs. of gruyere
smash a large clove of garlic and rub all over the surface of a thick fondue pot. pour 1 cup of dry white wine and 1 tbsp. of fresh lemon juice and heat gently to a simmer. toss in, one handful at a time, the above grated cheese, until melted, adding until all cheese is melted. do not boil. stir in 1 tbsp. of kirsch (cherry brandy) and a grating of fresh nutmeg and black pepper. set over a fondue burner with a low flame. serve with any of the following accompaniments:
cubes of bread (rustic Italian loaf or baguette)
cubes of ham
fried potato cubes
broiled garlic chicken sausages
steamed crisp-tender cauliflower/broccoli
etc, et al, atbp....
it is said that a woman who drops her bread cube in the fondue pot must kiss all the men around her, and a man who drops his, must buy everyone at the table a round of drinks...yodeling is optional.
